Moroccan Chicken Tagine
A flavorful and aromatic chicken dish inspired by the spices of India and Morocco, slow-cooked in a traditional clay pot.
Ingredients
- β1 1/2 pounds chicken breastcut into 8 pieces
- β2 tablespoons nutty peanut oilfor cooking
- β1 large crunchy chopped onionabout 2 cups
- β2 teaspoons moroccan spice blendavailable at most spice shops
- β2 tablespoons peanut buttercreamy is best
- β1 teaspoon tagine spice mixavailable at most spice shops
- β1 teaspoon saltto taste
- β4-6 black peppercornspepper to taste
- β1 cup chicken brothlow-sodium is best
- β1/4 cup chopped fresh cilantrofor garnish

1. Heat oil in a large clay or ceramic pot over medium heat.

2. Add onion and cook until softened, about 5 minutes.

3. Add spice blend and cook for 1 minute, until fragrant.

4. Add chicken and cook until browned on all sides, about 5-7 minutes.

5. Add peanut butter and stir until melted.

6. Add broth and bring to a boil.

7. Reduce heat to low and simmer, covered, for 20-25 minutes, or until chicken is cooked through.

8. Stir in spice mix and season with salt and pepper to taste.
