Cochinita Pibil
A traditional Mexican dish from the Yucatán region, Cochinita Pibil is a slow-roasted pork marinated in citrus juice, spices, and chili peppers.
Ingredients

- ●1 cup Orange juice
- ●1/2 cup Lime juice
- ●4 ancho chilies Chilies
- ●4 cloves Garlic
- ●2 teaspoons Cumin
- ●1 teaspoon Mexican oregano

In a blender, combine orange and lime juice, chilies, garlic, cumin, and oregano. Blend until smooth.

Rub the marinade all over the pork shoulder, making sure to coat it evenly.

Cover the pork and refrigerate for at least 2 hours or overnight.

Preheat the oven to 300°F (150°C).

Place the pork in a large Dutch oven or oven-safe pot, fat side up.

Roast the pork for 2 1/2 to 3 hours, or until it reaches an internal temperature of 190°F (88°C).

Let the pork rest for 10 to 15 minutes before slicing and serving.

Serve the pork with your choice of sides, such as rice, beans, or tortillas.
