Chickpea and Sausage Stew
Hearty and flavorful stew originating from Portugal, made with chickpeas and sausage.

- β1 pound, sliced Sausage (Chourico)Portuguese sausage
- β1 can, drained and rinsed Cannellini BeansAlternative to chickpeas
- β1 large, chopped OnionFor added flavor
- β3 cloves, minced GarlicFor added flavor
- β1 can, drained and rinsed ChickpeasMain ingredient
- β2 tablespoons Tomato PasteFor added flavor
- β1 cup Red WineFor added flavor
- β4 cups Chicken BrothFor added moisture
- β Salt and PepperTo taste

Instructions

Heat oil in a large pot over medium-high heat.

Add sausage and cook until browned, about 5 minutes.

Remove sausage from pot and set aside.

Add onion and garlic to pot and cook until softened, about 5 minutes.

Add chickpeas, tomato paste, red wine, and chicken broth to pot.

Bring mixture to a boil, then reduce heat to low and simmer for 20 minutes.
