Brazilian Chicken Pasta
A flavorful and easy-to-make pasta dish featuring chicken, tomatoes, and a hint of Brazilian spices.
Ingredients
- β8 oz pastaany shape
- β1 lb chicken breastboneless, skinless
- β2 tbsp nutty oilsuch as peanut or Brazil nut oil
- β1 can diced juicy tomatoes14.5 oz
- β1/4 cup chopped fresh cilantrooptional
- β1 tsp Brazilian spicessuch as cumin, oregano, and thyme
- βto taste salt and pepper
Instructions

Cook pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the nutty oil over medium-high heat.

Add the chicken breast and cook until browned and cooked through, about 5-6 minutes.

Transfer the chicken to a plate and cover with foil to keep warm.

In the same skillet, add the diced juicy tomatoes and cook until they start to break down, about 3-4 minutes.

Add the Brazilian spices and stir to combine.

Return the chicken to the skillet and toss with the tomato mixture.
