Pork Satay Skewers
A delicious and easy-to-make Malaysian-inspired dish featuring marinated pork tenderloin, grilled to perfection on skewers.
Ingredients
- β500g pork tenderloin
- β200ml nutty peanut sauce
- β100ml coconut milk
- β2tbsp soy sauce
- β1tbsp fish sauce
- β2tbsp brown sugar
- β2tbsp coriander
- β1tsp chili flakes
- β2cloves garlic
- β2stalks lemongrass

1. In a blender, combine peanut sauce, coconut milk, soy sauce, fish sauce, brown sugar, coriander, chili flakes, garlic, and lemongrass. Blend until smooth.

2. In a large bowl, whisk together the marinade ingredients. Add the pork tenderloin and mix until coated.

3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

4. Preheat grill to medium-high heat.

5. Thread the marinated pork onto satay skewers, leaving a small space between each piece.

6. Grill the skewers for 8-10 minutes, turning occasionally, until the pork is cooked through.

7. Brush the skewers with the remaining marinade during the last 2 minutes of grilling.
