Rillettes and Eggplant Tartine
A simple, flavorful appetizer featuring creamy rillettes and roasted eggplant, perfect for a quick snack or light lunch.
Ingredients

- β6 oz Rillettes
- β2 medium Eggplantsalted and roasted
- β1/4 cup, chopped Fresh parsley
- βto taste Salt
- β1/4 cup, crumbled Mellow cheese

Preheat the oven to 400Β°F (200Β°C).

Slice the eggplant into 1/4-inch thick rounds. Place on a baking sheet lined with parchment paper, and sprinkle with salt.

Roast in the preheated oven for 20-25 minutes, or until tender and lightly browned.

Meanwhile, toast the sliced French bread until lightly browned.

Spread a layer of rillettes on each toasted bread slice.
