Vietnamese Chicken Pho
A flavorful and aromatic Vietnamese noodle soup made with chicken, pho noodles, and a variety of spices.
Ingredients
- β1 pound Chicken BreastBoneless and skinless
- β1 package Pho NoodlesRice noodles
- β4 cups Nutty Ginger BrothHomemade or store-bought
- β1 medium OnionThinly sliced
- β2 inches GingerThinly sliced
- β2 Star AniseWhole
- β1 cinnamon stick CinnamonWhole
- β2 tablespoons Vietnamese Fish SauceOptional
- β2 tablespoons Soy SauceOptional

Bring the nutty ginger broth to a boil in a large pot.

Add the sliced onion and sliced ginger to the pot and simmer for 10 minutes.

Add the chicken breast to the pot and cook until cooked through.

Add the star anise and cinnamon stick to the pot and simmer for an additional 5 minutes.

Cook the pho noodles according to package instructions and set aside.

To assemble the pho, place some noodles in a bowl, then add sliced chicken and a spoonful of the hot broth.

Serve immediately and garnish with fresh herbs such as basil or mint.
