Peruvian Chicken Gallina Aji Soup

- β1 1 lb boneless, skinless chicken breast or thighscut into bite-sized pieces
- β2 2 medium aji amarillo peppersseeded and chopped
- β2 2 tbsp nutty achiote pasteor to taste
- β1 1 medium onionchopped
- β2 2 cloves garlicminced
- β1 1 tsp ground cuminor to taste
- β1 1 tsp paprikaor to taste
- β1/2 1/2 tsp saltor to taste
- β1/4 1/4 tsp black pepperor to taste
- β4 4 cups chicken brothlow sodium

Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add chicken and cook until browned, about 5-7 minutes.

Add aji amarillo peppers, cumin, paprika, salt, and pepper. Cook for 1 minute.
