Thai Noodle Stir-Fry
A quick and flavorful stir-fry made with Thai noodles and a tangy tamarind sauce.

Ingredients
- β8 oz Thai noodles
- β2 tbsp Tamarind sauce
- β1 cup Ball-shaped vegetables (e.g. carrots, bell peppers)
- β1 tbsp Nutty oil (e.g. peanut or coconut oil)for cooking
- β1/2 cup Boat-shaped noodles (e.g. rice stick noodles)optional

Instructions

Cook the Thai noodles according to package instructions. Drain and set aside.

Heat the nutty oil in a large skillet or wok over medium-high heat.

Add the ball-shaped vegetables and cook for 3-4 minutes, or until they start to soften.

Add the tamarind sauce and stir to combine.
