Irish Stir-Fry with Nutty Veggies
A hearty, one-pan Irish stir-fry dish loaded with nutty roasted vegetables and a hint of velvety creaminess.
Ingredients
- ●4 cups, chopped Irish kalestems removed
- ●2 tbsp Olive oilfor sautéing
- ●2 tbsp Stir-fry saucestore-bought or homemade
- ●1 cup, chopped Nutty roasted vegetablessuch as carrots, beets, or parsnips
- ●1/4 cup, softened Velvety cream cheesefor a creamy sauce
- ●1 tsp Fry seasoningoptional

Preheat your oven to 400°F (200°C).

Toss the chopped kale with 1 tbsp of olive oil, salt, and pepper on a baking sheet.

Roast the kale in the oven for 15-20 minutes, or until slightly caramelized.

In a large skillet, heat the remaining 1 tbsp of olive oil over medium-high heat.

Add the stir-fry sauce and cook for 1-2 minutes, or until fragrant.

Add the nutty roasted vegetables and cook for 2-3 minutes, or until tender.

Stir in the softened cream cheese until combined.
