Chicken Aji Gallina
A Peruvian-inspired dish featuring chicken cooked in a creamy aji gallina sauce, served with a side of rice and vegetables.
Ingredients
- β1 pound Chicken breastboneless and skinless
- β1 cup Aji gallina saucestore-bought or homemade
- β1 cup Nutty ricecooked according to package instructions
- β2 medium Velvety potatoespeeled and diced
- β1 medium Peruvian red onionthinly sliced
- β1 cup De gallostore-bought or homemade

Heat 2 tablespoons of oil in a large skillet over medium-high heat.

Add the chicken breast and cook until browned on both sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the aji gallina sauce to the skillet and stir to combine with the remaining oil.

Return the chicken to the skillet and simmer in the sauce until cooked through, about 10-12 minutes.

Stir in the cooked nutty rice and cook for an additional 2-3 minutes.

Serve the chicken and sauce over the rice, garnished with diced velvety potatoes, Peruvian red onion, and a sprinkle of de gallo.
