Turkish Lentil Stew with Tempeh

Ingredients
- β1 cup dried Mercimek (Turkish lentils)Rinse and soak overnight
- β1/2 cup crumbled Tempeh
- β2 tsp Turkish spices (sumac, cumin, coriander)Blend together or use store-bought mix
- β1 cup uncooked Corbasi (Turkish rice)Cook according to package instructions
- β2 tbsp Vegetable oil
- β1 medium chopped Onion
- β2 cloves minced Garlic
- βto taste Salt and pepper
- β1/4 cup chopped Fresh parsleyOptional garnish

Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add soaked lentils, spices, and salt. Cook for 1 minute, stirring constantly.

Add 4 cups water and bring to a boil. Reduce heat and simmer for 20-25 minutes.
