Halo-Halo with Jackfruit and Coconut
A Filipino-inspired dessert made with jackfruit, coconut, and a variety of fruits and creamy condiments.
Ingredients
- β1 cup, canned and drained jackfruit
- β1 cup coconut milk
- β1 cup ice
- β1 cup halo-halo mix-ins (e.g., sweetened beans, kaong, leche flan)
- β1/2 cup ube halaya
- β1 tsp ube powder
- β2 tbsp sugar
- β2 cups water

Combine coconut milk, sugar, and water in a saucepan and bring to a boil.

Reduce heat and simmer for 5 minutes.

Add ube halaya, ube powder, and jackfruit to the saucepan and stir to combine.

Remove from heat and let cool to room temperature.

In a separate bowl, mix together halo-halo mix-ins and ice.

Divide the mixture among individual serving cups.

Pour the cooled jackfruit mixture over the top of the mixture in each cup.

Cover and refrigerate for at least 2 hours or overnight.

Serve chilled and garnish with additional ube powder, if desired.
