Coconut Shrimp Bisque
A creamy and flavorful Kenyan-inspired bisque featuring succulent shrimp and toasted coconut.
Ingredients
- β1 pound Large Shrimp
- β1 can Coconut Milk
- β1 medium Onion
- β3 cloves Garlic
- β2 teaspoons Kenyan Curry Powder
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper
- β1/4 cup Toasted Coconut Flakes

Heat oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional 1-2 minutes.

Add the curry powder and cook for 1 minute.

Add the shrimp and cook until pink, about 2-3 minutes per side.

Add the coconut milk, salt, and black pepper. Bring to a simmer.

Reduce heat to low and let cook for 5-7 minutes, or until the flavors have melded together.

Use an immersion blender to puree the bisque until smooth.

Stir in the toasted coconut flakes.
