Moroccan Shrimp and Seffa Paella
A classic Moroccan dish infused with the flavors of the ocean, featuring succulent shrimp and a hearty seffa rice.
Ingredients
- β1 pound, peeled and deveined ShrimpFresh or frozen
- β1 cup Seffa riceDried
- β1/2 cup Dried apricotsChopped
- β3 tablespoons Olive oil
- β1 medium, chopped Onion
- β2 cloves, minced Garlic
- β1 teaspoon CuminGround
- β1 teaspoon PaprikaSmoked
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper

Heat 2 tablespoons of olive oil in a large paella pan or skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the shrimp and cook until pink and just cooked through, about 2-3 minutes per side.

Add the seffa rice and stir to coat with the oil and mix with the onion and garlic.

Add the diced dried apricots, cumin, paprika, salt, and black pepper.

Stir to combine, then add 2 cups of water.

Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes or until the liquid has been absorbed and the rice is tender.
