Ingredients

- ●8 oz (225g) pasta
- ●2 tbsp (30ml) oil

2. In a large bowl, combine sliced eggplant and 1 tbsp (15ml) of oil. Toss to coat.

3. Spread eggplant slices on a baking sheet and roast for 20-25 minutes, or until tender.
