Rich Eastern Vegetable Bisque
A creamy and flavorful bisque that blends the spices of the Middle East with the richness of vegetables. Serve warm for a comforting meal.
Ingredients

- β3 cloves garlicminced
- β2 medium carrotchopped
- β2 stalks celerychopped
- β1 medium red bell pepperchopped
- β2 cups rich eastern vegetable bisquehomemade or store-bought
- β2 cups chicken brothlow-sodium
- β2 tablespoons lemon juicefreshly squeezed
- β1 teaspoon cuminground

Heat oil in a large pot over medium heat.

Add the onion, garlic, carrot, celery, and red bell pepper. Cook until the vegetables are tender, about 10 minutes.

Add the vegetable bisque, chicken broth, lemon juice, and cumin. Bring to a boil, then reduce the heat and simmer for 10-15 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return it to the pot.

Season the soup with salt and pepper to taste.
