Traditional Ukrainian Borscht
A hearty and flavorful beet-based soup originating from Ukraine. This recipe combines the sweetness of beets with the savory flavor of pork.
Ingredients

- β1 pound, diced pork
- β1 large onion
- β3 cloves garlic
- β2 medium carrots
- β2 large potatoes
- β1/4 cup oil
- β4 cups rich beef broth
- β1 cup (homemade or store-bought) borscht
- β1/4 cup, chopped dill

In a large pot, heat oil over medium heat.

Add diced onion and cook until translucent, about 5 minutes.

Add minced garlic and cook for an additional 1-2 minutes.

Add diced pork and cook until browned, about 5-7 minutes.

Add beets, carrots, and potatoes to the pot. Pour in beef broth and bring to a boil.

Reduce heat to low and simmer for 20-25 minutes or until vegetables are tender.
