French Poffertjes Pancake
A French-inspired pancake recipe featuring poffertjes and a sweet, oily twist.
Ingredients
- β1 package (6-8 pieces) Poffertjes
- β1 1/2 cups All-purpose flourfor pancake batter
- β1/4 cup Granulated sugarfor pancake batter
- β2 Large eggsfor pancake batter
- β1 cup Milkfor pancake batter
- β2 tablespoons Unsalted butter, meltedfor pancake batter
- β1/4 cup Oily syrup (e.g. maple syrup)for topping

Preheat a non-stick frying pan or griddle over medium heat.

In a large bowl, whisk together flour, sugar, eggs, milk, and melted butter until smooth.

Add the poffertjes to the batter and gently fold to combine.

Using a 1/4 cup measuring cup, scoop the batter onto the preheated pan.

Cook the pancakes for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.

Flip the pancakes and cook for an additional 1-2 minutes.
