Kambing Italian-Style Pork Ragu
A twist on the classic Italian ragu, using kambing meat and incorporating malaysian flavors.
Ingredients
- β1 pound kambingcut into bite-sized pieces
- β1 pound pork shouldercut into bite-sized pieces
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1-2 teaspoons malaysian chilidepending on desired spiciness
- β2 tablespoons tomato paste
- β1 cup canned crushed tomatoes

Heat olive oil in a large Dutch oven over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the kambing and pork shoulder, cooking until browned on all sides, about 5-7 minutes.

Add the malaysian chili, tomato paste, and crushed tomatoes. Stir to combine.

Bring the mixture to a simmer, then reduce heat to low and let cook for 2 hours, or until the meat is tender.
