Sardinian Orecchiette with Fish
A traditional Sardinian pasta dish featuring pan-seared fish and a tangy oily sauce.
Ingredients
- β12 oz orecchiette
- β1 lb fish (such as sea bass or snapper)cut into 1-inch pieces
- β2 tbsp olive oilfor cooking
- β1 cup sardinian sauce
- β1/4 lb sardinian sausageoptional
- β1/4 cup chopped parsley
Instructions

Bring a large pot of salted water to a boil and cook the orecchiette according to package instructions.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the fish to the skillet and cook for 3-4 minutes per side, or until cooked through.

Remove the fish from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet and cook for 1 minute.

Add the sardinian sausage (if using) to the skillet and cook for 2-3 minutes, or until browned.

Add the sardinian sauce to the skillet and stir to combine.

Add the cooked orecchiette to the skillet and toss to combine with the sauce.

Return the fish to the skillet and toss to combine with the pasta and sauce.

Season with salt and pepper to taste.

Serve hot, garnished with chopped parsley.
