Australian Vegetable Casserole

- β1 medium australian eggplantsliced

- β2 tablespoons oil
- β2 tablespoons tomato paste
- β1 cup beef broth
- β1 cup cheddar cheese

In a large pot, heat the oil over medium heat. Add the onion and cook until softened, about 5 minutes.
