Croatian Dumplings with Old Fashioned Dough
A traditional Croatian dish featuring homemade dumplings and rich, old-fashioned dough.
Ingredients
- β2 1/4 cups all-purpose flour
- β1 teaspoon yeast
- β1 1/2 cups warm water
- β1 teaspoon salt
- β2 tablespoons milk
- β2 large eggs
- β1 cup cottage cheese
- β1/4 cup chopped scallions
- β2 tablespoons sour cream
- β1/2 teaspoon black pepper

In a large mixing bowl, combine flour, yeast, and salt. Mix well.

Gradually add warm water to the dry ingredients and mix until a dough forms.

Knead the dough for 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour.

Preheat a large pot of salted water and bring it to a boil.

Punch down the dough and divide it into small pieces.

Roll out each piece into a thin circle.

Place a tablespoon of cottage cheese, some chopped scallions, and a sprinkle of black pepper in the center of each circle.

Fold the dough over the filling and press the edges together to seal the dumpling.
