Classic Filipino Menudo
A hearty breakfast dish made with pork and liver, cooked in a flavorful tomato-based sauce.
Ingredients
- β1 pound Pork, cut into small cubesYou can use pork shoulder or pork belly
- β1/2 pound Pork liver, cut into small piecesYou can use fresh or frozen pork liver
- β1 medium Onion, choppedYou can use yellow or white onion
- β3 cloves Garlic, mincedYou can use fresh or frozen garlic
- β2 medium Tomato, crushedYou can use fresh or canned tomatoes
- β2 tablespoons Fish sauceYou can use patis or fish sauce
- β1/2 teaspoon Black pepperYou can use fresh or ground black pepper
- β1/4 teaspoon SaltYou can use kosher or sea salt
- β2-3 Chili peppers, slicedYou can use fresh or dried chili peppers
- β2 Bay leavesYou can use fresh or dried bay leaves

Heat oil in a large pot over medium heat.

Add the pork and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.

Add the pork liver and cook until browned, about 3-4 minutes.

Add the crushed tomato, fish sauce, black pepper, and salt. Stir well.

Add the chili peppers and bay leaves. Stir well.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes.

Serve hot, garnished with chopped green onions and a squeeze of lime juice.
