Slovakian-Mexican Pork Casserole
A twist on traditional Slovakian pork dishes, this casserole combines oven-roasted pork with the bold flavors of Mexican cuisine.
Ingredients
- β1.5 pounds Old Style Pork Shoulder
- β1 can Oven Roasted Tomatoes
- β1 pound Slovakian Sausagecasings removed
- β1 cup Mexican Cheese Blend
- β2 tablespoons Mexican Spice Blend
- β2 tablespoons Olive Oil
- β1 medium Oniondiced
- β3 cloves Garlicminced
- β1/4 cup Cilantrochopped

Preheat oven to 300Β°F (150Β°C).

Season the pork shoulder with Mexican Spice Blend.

Heat olive oil in a large skillet over medium-high heat.

Sear the pork shoulder until browned on all sides, about 5 minutes.

Transfer the pork to a large Dutch oven or oven-safe pot.

Add the diced onion and minced garlic to the skillet and cook until softened.

Add the Slovakian sausage and cook until browned, breaking up with a spoon as needed.

Stir in the oven-roasted tomatoes and Mexican Cheese Blend.

Cover the pot and transfer to the preheated oven.

Bake for 2 1/2 hours, or until the pork is tender and easily shreds with a fork.
