Tagine Chicken with Olives
A traditional Moroccan dish made with chicken, olives, and spices, slow-cooked in a clay pot called a tagine. This recipe is a hearty and flavorful representation of North African cuisine.
Ingredients
- β1 pound chicken thighsbone-in, skin-on
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup chicken broth
- β1 tablespoon infused olive oil
- β1/2 cup polish olives
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1/2 teaspoon cinnamon

Heat the olive oil in the bottom of a clay tagine or a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the chicken broth, infused olive oil, olives, cumin, coriander, and cinnamon.

Bring the mixture to a boil, then cover the tagine or Dutch oven.

Transfer the tagine to the oven and cook at 300Β°F for 30 minutes.

Remove the tagine from the oven and let it rest for 10 minutes before serving.
