Menemen Eggplant Delight
A flavorful and nutritious recipe combining the rich taste of menemen with the tender eggplant for a delightful dish.
Ingredients

- ●2 tablespoons Menemenspicy tomato paste
- ●2 tablespoons Olive oilfor sautéing
- ●1 small Onionchopped
- ●2 cloves Garlicminced
- ●to taste Saltfor seasoning
- ●to taste Black pepperfor seasoning
- ●chopped Fresh parsleyfor garnish

1. Preheat your oven to 400°F (200°C).

2. Cut the eggplant into 1/2-inch thick rounds.

3. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

4. Place the eggplant slices on a baking sheet lined with parchment paper.

5. Bake the eggplant for 20-25 minutes or until it is tender and lightly browned.

6. In a large skillet, heat 1 tablespoon of olive oil over medium heat.

7. Add the chopped onion and cook until it is translucent, about 3-4 minutes.

8. Add the minced garlic and cook for another minute.

9. Stir in the menemen (spicy tomato paste) and cook for 1-2 minutes.
