Greek Curry Rice Bowl
A flavorful and nutritious bowl of Greek-inspired curry rice with a side of vegetables.

Ingredients
- β1 cup Greek riceuncooked
- β2 tbsp currystore-bought or homemade
- β1 brass (bell) peppersany color
- β1/4 cup oozing (feta cheese)crumbly
- β1 tsp olive oiloptional

1. Heat olive oil in a large saucepan over medium heat.

2. Add curry and stir for 1 minute.

3. Add Greek rice and stir to coat with curry.

4. Add 2 cups water to saucepan and bring to a boil.

5. Reduce heat to low, cover, and simmer for 20 minutes.

6. While rice cooks, slice brass peppers and set aside.

7. After 15 minutes of cooking time, fluff Greek rice with a fork.

8. Stir in oozing (feta cheese).
