Chickpea Casserole Italiano
A hearty, comforting casserole with chickpeas, Italian flavors, and a gooey cheese topping. Perfect for a cozy dinner.
Ingredients

- β2 tsp Italian seasoningdried
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 can (28 oz) canned crushed tomatoes
- β1 cup ricotta cheese
- β1 cup parmesan cheeseshredded
- β1 cup mozzarella cheeseshredded
- β1 casserole9x13 inch dish

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute.

Stir in the Italian seasoning, crushed tomatoes, and chickpeas.

In a large bowl, combine the ricotta cheese, parmesan cheese, and mozzarella cheese.
