Koji Falafel with Mediterranean Sauce
A twist on traditional falafel with a boost of umami from koji, served with a creamy mediterranean sauce.
Ingredients
- β 1 cup dried chickpeas
- β 1/4 cup koji powderavailable at Asian markets or online
- βchopped 1/4 cup mediterranean oregano
- βminced 2 cloves garlic
- β 1/4 cup shoyuJapanese soy sauce
- β 1/4 cup olive oil
- β 1/2 cup falafelstore-bought or homemade
- β 1/4 cup lemon juice
- β Salt and pepper to taste

Soak chickpeas in water overnight. Drain and rinse.

Preheat oven to 375Β°F (190Β°C).

In a food processor, combine chickpeas, koji powder, oregano, garlic, shoyu, and olive oil. Process until coarsely ground.

Using your hands, shape mixture into patties.

Bake for 20 minutes or until golden brown.

While falafel bakes, warm mediterranean sauce in a small saucepan over low heat.

Assemble falafel in a pita with warmed sauce and additional toppings, if desired.

Note: For a crisper exterior, pan-fry for 3-4 minutes per side after baking.
