Syrian Vegetable Gratin with Oozing Cheese
A flavorful, comforting gratin featuring roasted vegetables and a rich, oozing cheese topping.

- β1 cup, shredded Syrian cheesesuch as akkawi or halloumi
- β1 cup, sliced into 1/4-inch thick rounds gratin
- β1 medium, thinly sliced onion
- β2 cloves, minced garlic
- β1 teaspoon cumin
- β1/2 teaspoon paprika
- β1/4 teaspoon salt
- β1/4 teaspoon black pepper
- β1/4 cup, chopped fresh parsley

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, heat the oil over medium heat. Add the sliced onion and cook, stirring occasionally, until it's lightly browned and caramelized, about 20-25 minutes.

Add the minced garlic, cumin, paprika, salt, and pepper to the skillet and cook for 1-2 minutes, stirring constantly.

In a separate saucepan, combine the sliced gratin and enough cold water to cover. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 5-7 minutes, or until the gratin is slightly softened.

In a large, shallow baking dish, create a layer of the onion mixture. Arrange a layer of the cooked gratin on top, followed by a sprinkle of shredded cheese.

Repeat the layering process two more times, ending with a layer of cheese on top.

Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the cheese is bubbly.
