Tofu Wrap with Slovakian Twist
A Mexican-inspired vegan wrap with a unique Slovakian twist. This dish combines the flavors of Mexico with the spices of Slovakia.
Ingredients
- β1 package, sliced Slovakian oozing sausageMake sure to squeeze out excess oil
- β1 block, drained and crumbled Extra-firm tofuPress tofu for at least 30 minutes before use
- β1 large wrap Whole wheat wrapChoose a brand with a 'gluten-free' label
- β1 handful Mixed greensAdd your favorite lettuce, spinach, and other greens
- β1 bell pepper Diced bell peppersRed, yellow, or orange, whichever you like
- β1/2 onion Diced onionsRed or yellow, thinly sliced
- β1/4 cup, chopped CilantroAdd as much or as little as you like
- β1 tsp Slovakian paprikaAdd a smoky flavor to your dish
- β2 tbsp Lime juiceFreshly squeezed, of course
- βto taste Salt and pepperAdjust seasoning to your liking

Preheat a non-stick pan over medium-high heat.

Add sliced Slovakian oozing sausage and cook until browned, about 3-4 minutes.

Add crumbled tofu and cook until golden brown, about 4-5 minutes.

Add diced bell peppers and onions and cook until tender, about 5 minutes.

Add mixed greens, chopped cilantro, and Slovakian paprika. Stir to combine.

Wrap the mixture in a whole wheat wrap and slice in half.

Drizzle with lime juice and season with salt and pepper to taste.
