French Churrasco Skirt Steak
Grilled skirt steak, marinated in a blend of Brazilian and French flavors, served with skewers of oozy ingredients.
Ingredients
- β4 Skirt Steak1.5-2 pounds, preferably with a good balance of fat and lean meat
- β1/4 cup Olive Oil
- β4 cloves Garlicminced
- β2 tablespoons Fresh Thymechopped
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper
- β4 Brazilian Sausagesliced, for skewers

1. In a large resealable plastic bag, combine olive oil, garlic, thyme, salt, and pepper.

2. Add the skirt steak to the marinade, turning to coat evenly.

3. Seal the bag and refrigerate for at least 2 hours or overnight.

4. Preheat grill to medium-high heat.

5. Remove the steak from the marinade, letting any excess liquid drip off.

6. Grill the steak for 4-5 minutes per side, or until it reaches an internal temperature of 130-135Β°F for medium-rare.

7. Transfer the steak to a cutting board and let it rest for 5 minutes.

8. Meanwhile, thread the sliced sausage onto skewers.

9. Grill the sausage skewers for 2-3 minutes per side, or until lightly charred.
