Thai Larb Chicken Salad
A spicy and sour salad from Thailand, made with crispy fried chicken, crunchy vegetables, and a tangy dressing.
Ingredients
- β400g chicken breast
- β200g crisp lettuce
- β2 tbsp oozy fish sauce
- β1-2 thai red chilidepending on desired heat level
- β2 tsp larb spice mix
- β100g crisp shallots
- β100g crisp mint
- β50ml chicken broth

1. Cut the chicken into bite-sized pieces and season with salt.

2. Heat a large skillet over medium-high heat and add the chicken. Cook until browned and cooked through.

3. In a blender or food processor, combine the fish sauce, chili, larb spice mix, chicken broth, and a squeeze of lime juice.

4. In a large bowl, combine the cooked chicken, crisp lettuce, crisp shallots, and crisp mint.
