Taleggio and Oozy Gratin
A rich and creamy gratin featuring Taleggio and oozy cheese. Perfect as a side dish or a comforting main course.
Ingredients
- β250g Taleggio cheese
- β150g oozy cheese
- β2 medium kenyan sweet potato
- β3 tbsp olive oil
- β2 cloves garlicminced
- βto taste salt
- βto taste black pepper

Preheat the oven to 180Β°C.

Peel and thinly slice the sweet potatoes.

In a large saucepan, combine the sliced sweet potatoes and enough cold water to cover them.

Bring to the boil over high heat, then reduce the heat to medium-low and simmer for 5 minutes.

Drain the sweet potatoes and set them aside.

In a large bowl, combine the Taleggio cheese, oozy cheese, minced garlic, salt, and black pepper.

Add the cooked sweet potatoes to the bowl and stir until well combined.

Transfer the mixture to a baking dish and drizzle with olive oil.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the gratin is heated through.
