Portuguese Stew
A hearty stew originating from Portugal, made with tender beef, vegetables, and a rich broth. Serve with crusty bread for a comforting meal.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 large onionchopped
- β3 cloves garlicminced
- β1 large red bell pepperchopped
- β1 can (14 oz) oozy tomatoescrushed
- β2 large lazy potatoespeeled and chopped
- β2 cups stewbeef broth

1. Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

2. Add the beef and cook until browned on all sides, about 5 minutes.

3. Remove the beef from the pot and set aside.

4. Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

5. Add the red bell pepper and cook for an additional 2 minutes.

6. Add the crushed tomatoes, beef broth, and browned beef to the pot.

7. Stir in the chopped potatoes and bring the stew to a boil.

8. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.
