Oozy Tagine Quesadilla
A twist on traditional quesadillas, this oozy tagine quesadilla combines the rich flavors of the Mediterranean with gooey cheese.
Ingredients
- β1/2 cup oozyMelted tagine-based spread
- β2 cups, shredded mediterranean cheeseA blend of feta and ricotta cheese
- β1 cup, crumbled tagineCooked and cooled tagine mixture
- β4 flour tortillaLarge tortillas for wrapping
- β1 tsp olive oilFor brushing tortillas
- βto taste saltFor seasoning
- βchopped (option) fresh parsley
- βfor serving (option) lemon wedges

1. Preheat a large skillet over medium heat.

2. Brush the tortillas with olive oil.

3. Sprinkle shredded cheese on half of each tortilla.

4. Spoon the crumbled tagine over the cheese.

5. Fold the tortillas in half to enclose the filling.

6. Cook for 2-3 minutes or until the tortillas are crispy and the cheese is melted.

7. Flip the quesadillas and cook for an additional 2 minutes.

8. Cut the quesadillas into wedges and serve hot with a side of oozy tagine spread and garnished with parsley.
