Mediterranean Fish Stew
A hearty fish stew with a Mediterranean twist, featuring oozy feta cheese and a medley of fish and vegetables.
Ingredients
- β1 pound Fish (Cod, Halibut or Snapper)Cut into 1-inch pieces
- β2 tablespoons Olive Oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 teaspoon Mediterranean Oregano
- β1/2 cup Feta Cheese
- β1 pint Cherry TomatoesHalved
- β1/4 cup Kalamata OlivesPitted
- β2 tablespoons Lemon Juice
- βto taste Salt and Pepper

Heat olive oil in a large pot over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the fish and cook until opaque, about 3-4 minutes.

Add the Mediterranean oregano, cherry tomatoes, and olives.

Pour in the lemon juice and stir to combine.

Reduce heat to low and simmer for 5-7 minutes.

Stir in the feta cheese and cook until melted and gooey.
