Spanish Beef Stew
A hearty Spanish-inspired stew made with tender beef shin and a rich oozy sauce.
Ingredients
- β1 kg beef shincut into 2-inch pieces
- β2 tbsp Spanish olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup red wine
- β2 cups beef broth
- β2 tbsp tomato paste
- β1 can tomatoesdiced
- β1 tsp smoked paprika
- βto taste salt and pepper

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef in batches, then set aside.

Add more oil if needed, then sautΓ© the onion and garlic until softened.

Add the red wine and bring to a boil, scraping up browned bits.

Add the beef broth, tomato paste, and smoked paprika.

Return the beef to the pot, cover, and transfer to the oven.

Braise for 2 1/2 hours or until the beef is tender.

Stir in the diced tomatoes and cook for an additional 10 minutes.

Season with salt and pepper to taste.
