Roasted Tofu Bowl
A simple and flavorful bowl filled with roasted tofu and mixed vegetables.
Ingredients
- β1 block Tofu14 oz
- β1 teaspoon Vegan bowl seasoningadjust to taste
- β2 tablespoons Olive oilfor roasting
- β2 medium Carrotspeeled and chopped
- β1 pound Brussels sproutstrims and halved
- β2 medium Sweet potatoespeeled and cubed
- β1 teaspoon Saltfor roasting
- β1/2 teaspoon Black pepperfor roasting

Preheat oven to 400Β°F (200Β°C).

Cut tofu into 1-inch cubes and place on a parchment-lined baking sheet.

Drizzle olive oil over tofu and sprinkle with vegan bowl seasoning. Toss to coat.

Roast tofu in the oven for 20-25 minutes, or until golden brown.

Toss Brussels sprouts with olive oil, salt, and black pepper. Spread on a separate baking sheet.

Roast Brussels sprouts in the oven for 20-25 minutes, or until tender and caramelized.

Toss sweet potatoes with olive oil, salt, and black pepper. Spread on a separate baking sheet.

Roast sweet potatoes in the oven for 25-30 minutes, or until tender.

Toss carrots with olive oil, salt, and black pepper. Spread on a separate baking sheet.

Roast carrots in the oven for 20-25 minutes, or until tender.

Assemble the bowl by placing roasted tofu, Brussels sprouts, sweet potatoes, and carrots in a bowl. Serve hot.
