Smoked Kenyan Outdoor Stew
A hearty and flavorful stew made with smoked beef and inspired by Kenyan cuisine, perfect for outdoor gatherings.
Ingredients

- β1 can chickpeadrained and rinsed
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 cup stewhomemade or store-bought
- β2 cups waterfor stew
- β2 tablespoons tomato pasteoptional
- βto taste saltoptional
- βto taste black pepperoptional

Heat oil in a large pot over medium-high heat.

Add the chopped onion and sautΓ© until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the sliced smoked beef and cook until browned, about 5 minutes.

Add the chopped carrots and potatoes, and cook for 5 minutes.

Add the canned chickpea, homemade or store-bought stew, water, tomato paste, salt, and black pepper.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
