French-Style Chicken Empanadas
A twist on the classic empanada, this French-inspired dish features chicken empanadas with a rich, garlicky sauce.
Ingredients
- ●1 pound chicken breastBoneless and skinless
- ●1 package empanada doughStore-bought or homemade
- ●1/2 cup outrageously garlicky sauceSee below for recipe
- ●1/2 cup shredded cheeseMonterey Jack or Cheddar work well
- ●1/4 cup chopped cilantroOptional

Preheat oven to 375°F (190°C).

Roll out empanada dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a small bowl, mix together shredded cheese, chopped cilantro, and a pinch of salt and pepper.

Place a tablespoon or two of the cheese mixture onto one half of each dough circle.

Place a piece of chicken breast on top of the cheese mixture.

Fold the other half of the dough circle over the filling and press the edges together to seal.

Brush the tops of the empanadas with a little bit of water and sprinkle with a pinch of salt.

Place the empanadas on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.

While the empanadas are baking, prepare the garlicky sauce by mincing 2-3 cloves of garlic and sautéing them in a little bit of oil until fragrant.

Add a splash of chicken broth to the pan and bring to a simmer.

Reduce heat to low and let sauce simmer for 5-10 minutes, or until it has thickened slightly.
