Comte and Kenyan Roasted Pasta
A creamy pasta dish with roasted comte and kenyan spices, perfect for a cozy evening meal. This recipe is a fusion of French and African flavors.
Ingredients
- β250g Comte cheese
- β250g Pastapenne or fusilli work well
- β2 tsp Kenyan spice blend
- β2 cloves Garlicminced
- β2 tbsp Olive oil
- β1/2 cup Roasted red peppersdiced
- β1/4 cup Fresh parsleychopped
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 400Β°F (200Β°C).

Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the Kenyan spice blend and cook for 1 minute.

Add the roasted red peppers and cook for 2-3 minutes.

Stir in the Comte cheese until melted and creamy.
