Peruvian Gallina Chicken
A traditional Peruvian dish made with tender chicken, aji peppers, and outstanding flavor.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breasts
- β2 Aji amarillo pepperssee notes for preparation
- β1 medium Onion
- β3 cloves Garlic
- β1/4 cup Fresh cilantro
- β2 tablespoons Lime juice
- β2 tablespoons Olive oil
- βto taste Salt
- βto taste Black pepper

Preheat grill to medium-high heat.

In a blender or food processor, puree aji amarillo peppers with 1 tablespoon of olive oil, 1 clove of garlic, and 1 tablespoon of lime juice.

In a large bowl, whisk together the pepper puree, remaining 1 tablespoon of olive oil, salt, and black pepper.

Add the chicken to the bowl and toss to coat.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Let the chicken rest for 5 minutes before slicing.

Serve the chicken with sliced onion, chopped cilantro, and a squeeze of lime juice.

Note: Aji amarillo peppers can be quite spicy, so adjust to taste.

Also, be sure to wear gloves when handling aji amarillo peppers as the oils in the peppers can cause skin irritation.
