Slovakian Bean Casserole
A hearty Slovakian-inspired casserole made with beans and soya for a meat-free option.
Ingredients
- ●1 1/2 cups Soaked kidney beansCanned alternatives can be used
- ●1 cup Soya minceAvailable in most health food stores
- ●2 tablespoons Olive oilFor greasing the oven dish
- ●1 medium OnionChopped
- ●3 cloves GarlicMinced
- ●1 teaspoon Caraway seedsOptional, for authentic flavor
- ●1 cup Tomato pureeCanned or homemade
- ●1 cup Diced tomatoesCanned
- ●1 teaspoon PaprikaSweet or smoked, as preferred
- ●to taste Salt and pepperAdjust to taste

Preheat the oven to 180°C (350°F).

In a large pan, heat the olive oil over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the soaked kidney beans, soya mince, caraway seeds, paprika, salt, and pepper. Stir well.

Cook for about 10 minutes, stirring occasionally.

Add the tomato puree and diced tomatoes. Stir well.

Transfer the mixture to a greased 20x20cm oven dish.

Bake in the preheated oven for about 25-30 minutes, or until the casserole is hot and bubbly.

Serve hot, garnished with chopped fresh parsley or thyme, if desired.
