Ukrainian Baked Mackerel with Pilaf
A hearty Ukrainian-inspired dish featuring baked mackerel served with a flavorful pilaf. The combination of fish and rice provides a balanced and satisfying meal.
Ingredients
- β4 mackerel filletsFresh or frozen, skin removed
- β1 cup uncooked white riceLong-grain or regular
- β1 cup carrotsChopped

- β2 tbsp olive oilFor baking

Preheat the oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Place the mackerel fillets on the prepared baking sheet, skin side up.

Drizzle the olive oil over the fish and sprinkle with salt, black pepper, and paprika.

Bake the mackerel in the preheated oven for 12-15 minutes, or until cooked through.

While the fish is baking, prepare the pilaf.

In a large saucepan, heat a couple of tablespoons of olive oil over medium heat.

Add the chopped carrots and onions and cook until the vegetables are tender, about 5 minutes.

Add 2 cups of water to the saucepan and bring to a boil.
