Slovakian Braised Mushroom Stew
A hearty Slovakian-inspired stew made with tender mushrooms and served with a crusty loaf of bread.
Ingredients
- β1 pound MushroomsAssorted wild mushrooms
- β2 tablespoons Olive oilExtra-virgin
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 cup Red wineDry
- β2 cups Vegetable brothLow-sodium
- β2 tablespoons Tomato pasteConcentrated
- β2 Bay leavesFresh
- β1 sprig ThymeFresh

Preheat oven to 300Β°F (150Β°C).

Heat olive oil in a large Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.

Add garlic and cook for an additional 1-2 minutes.

Add mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add red wine, vegetable broth, tomato paste, bay leaves, and thyme. Stir to combine.

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Braise the stew for 20-25 minutes, or until the mushrooms are tender.

Season the stew with salt and pepper to taste.
