Keto Norwegian Charred Udon Noodles
A keto take on traditional udon noodles, charred to perfection and infused with Norwegian flavors.
Ingredients
- ●8 oz Udon noodles
- ●4 fillets Norwegian salmon filletsFresh or frozen, skin removed
- ●4 cloves Charred garlicSee notes for charred garlic method
- ●1 bunch Fresh parsley
- ●2 tbsp Avocado oil
- ●to taste Salt
- ●to taste Pepper
- ●2 tbsp Lemon juice
- ●1 tsp Dried dill weed

Preheat the oven to 400°F (200°C).

Season the salmon fillets with salt, pepper, and dried dill weed.

Place the salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes or until cooked through.

Meanwhile, char the garlic by cooking it in a skillet over medium heat for 5-7 minutes or until caramelized.

Cook the udon noodles according to package instructions. Drain and set aside.

In a large skillet, heat the avocado oil over medium-high heat.

Add the charred garlic to the skillet and sauté for 1 minute.

Add the cooked udon noodles to the skillet and toss with the garlic and oil.

Squeeze the lemon juice over the noodles and toss to combine.

Serve the noodles with the cooked salmon fillets on top.
