Indian-Style Lentil Curry
A flavorful and nutritious curry made with red lentils, Indian spices, and a hint of glaze. Perfect for a comforting meal on a chilly evening.
Ingredients

- ●2 teaspoons curry powderstore-bought or homemade
- ●2 tablespoons glaze (honey and lemon juice)optional

Preheat the oven to 375°F (190°C).

In a large saucepan, sauté the chopped onion and grated ginger in a little water until softened.

Add the red lentils, curry powder, and salt. Stir well to combine.

Add the water to the saucepan and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes or until the lentils are tender.

Transfer the saucepan to the preheated oven and bake for an additional 10-15 minutes.

Remove the saucepan from the oven and stir in the glaze (if using).
