Argentinian Lamb Asado with Thai Twist
A fusion of Argentinian asado and Thai flavors, featuring lamb cooked to perfection in the oven.
Ingredients
- ●2 pounds lamb shoulderbone-in
- ●2 tablespoons Thai red curry pastehomemade or store-bought
- ●2 teaspoons fish sauceoptional
- ●2 tablespoons brown sugaroptional
- ●2 roasted red pepperssweet and smoky
- ●3 cloves garlicminced
- ●1/4 cup fresh cilantrochopped
- ●2 tablespoons coconut oilfor brushing

Preheat the oven to 400°F (200°C).

In a small bowl, mix together curry paste, fish sauce, and brown sugar (if using).

Rub the mixture all over the lamb shoulder, making sure to coat it evenly.

Place the lamb in a roasting pan and put it in the oven.

Roast the lamb for 20 minutes per pound, or until it reaches an internal temperature of 145°F (63°C).

After 30 minutes of roasting, brush the lamb with coconut oil.

Continue roasting the lamb for another 20-25 minutes, or until it's nicely browned.

While the lamb is cooking, roast the red peppers in the oven for 20-25 minutes, or until they're charred and blistered.

Let the lamb rest for 10-15 minutes before slicing it thinly against the grain.
